Your e-mail address is kept while your submission is still pending review. After the quote has been reviewed, the server will send you an email with the outcome, and will remove your e-mail from the database. - Are you logging who submitted what quote?
The IP address the machine you submit a quote from is kept in the database until the quote has been reviewed, once reviewed, it is removed; They are stored so we can track spam, and aren't displayed publicly.
